  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1.5 pounds ground lamb
  • 1 cup frozen peas
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 pounds russet potatoes, peeled and cut into chunks
  • 1/2 cup whole milk
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon salt (for potatoes)

Method

8 steps
  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and carrots; cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
  3. Add ground lamb and cook, breaking it up, until browned, about 8 minutes. Drain excess fat if needed.
  4. Stir in flour and cook for 1 minute. Add beef broth, Worcestershire sauce, thyme, salt, and pepper. Simmer until thickened, about 5 minutes. Stir in frozen peas and set aside.
  5. Meanwhile, place potatoes in a large pot and cover with cold water. Bring to a boil, then reduce heat and simmer until tender, about 15 minutes. Drain well.
  6. Mash potatoes with milk, butter, and salt until smooth and creamy.
  7. Transfer meat mixture to a 9x13-inch baking dish. Spread mashed potatoes evenly over the top, sealing edges.
  8. Bake for 25-30 minutes, until bubbly and top is golden. Let rest 10 minutes before serving.
