- Sugar 2/3 cup (90g)
- Cake flour 1 cup (100g)
- Cocoa powder 3 teaspoons (10g)
- Baking powder 2/3 teaspoon (3g)
- Unsalted butter 40g
- Milk 3 tablespoons (30g)
- Salt 1/3 teaspoon (2g)
- Heavy cream 1/3 cup (60g)
- Dark chocolate 2/3 cup (60g)
- Heavy cream or whipped cream 2 cups (360g)
- Sugar 3 tablespoons (30g)
- Cocoa powder 2 tablespoons (15g)
- Sugar 3 tablespoons (30g)
- Water 1/3 cup (60g)
- Vanilla extract 1 teaspoon (3g)
Method
- Cut the parchment paper.
- Mix the eggs and sugar to make the cake sheet batter.
- Sift the cake flour, cocoa powder, baking powder, and salt.
- Melt the unsalted butter and milk and mix into the batter.
- Bake in a 170°C oven for 25 minutes or in a 160°C air fryer for 30 minutes.
- For the chocolate ganache, heat the heavy cream and mix with the dark chocolate to melt.
- Mix the heavy cream, sugar, and cocoa powder to whip the chocolate cream.
- Mix the sugar and water to make the cake sheet syrup.
- Cut the cake sheet and brush with syrup.
- Spread the chocolate cream and ganache on the cake.
- Make the castella powder and coat the cake with it.
- Decorate the cake in the shape of animal faces.
- Let the finished cake rest in the refrigerator for at least 6 hours.
