  • 1 cup (200g) dried lentils
  • 2 eggs
  • 1/2 cup water
  • A dash of Himalayan salt
  • 1 tsp dried garlic
  • 1 tbsp olive oil
  • 2 tbsp psyllium husk
  • ½ cup (50g) mozzarella cheese
  • ½ cup (50g) cheddar cheese
  • ¼ cup (30g) sesame seeds
  • 1 tsp baking powder
  • 2 tablespoons chopped dill
  • Vegetable oil for greasing the pan
  • Sauce ingredients:
  • 1 avocado
  • 2 tablespoons Greek yogurt
  • 3 tablespoons chopped fresh basil
  • 2 cloves garlic
  • Salt and black pepper to taste
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil

Method

10 steps
  1. Soak the dried lentils in water for several hours, preferably overnight.
  2. Rinse and drain the swollen lentils.
  3. Place lentils, eggs, water, Himalayan salt, dried garlic, olive oil, and psyllium husk in a blender and puree with an immersion blender.
  4. Add mozzarella cheese, cheddar cheese, baking powder, and chopped dill to the mixture and mix well.
  5. Grease a baking pan with vegetable oil.
  6. Pour the batter into the pan and make a slit on top.
  7. Sprinkle sesame seeds over the batter.
  8. Bake for 45–50 minutes at 180°C (350°F) until golden brown.
  9. For the sauce, blend avocado, Greek yogurt, chopped basil, garlic, lemon juice, olive oil, salt, and black pepper until smooth.
  10. Serve the lentil bread with the avocado sauce.
