53g Protein Pizza Rolls

Ingredients

  • 1kg lean beef mince (5% fat)
  • 150g pepperoni, roughly chopped
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp smoked paprika
  • 2 tsp dried oregano
  • 1 can (400g) crushed tomatoes
  • 2 tbsp concentrated tomato paste
  • 15g flat leaf parsley, roughly chopped
  • salt and cracked black pepper
  • 6 wraps of choice
  • 250g low-fat mozzarella cheese, grated
  • spray oil
  • sauce of choice

Method

  1. Preheat oven and prepare a baking tray with spray oil.
  2. In a pan, cook lean beef mince until browned.
  3. Add pepperoni, onion powder, garlic powder, smoked paprika, and dried oregano to the beef and cook briefly.
  4. Stir in crushed tomatoes, concentrated tomato paste, and parsley.
  5. Season with salt and cracked black pepper and simmer until thickened.
  6. Lay out wraps and spread sauce of choice on each.
  7. Add the meat mixture and sprinkle grated mozzarella cheese on top.
  8. Roll up the wraps tightly and place on the baking tray.
  9. Bake in the oven until wraps are golden and cheese is melted.
  10. Allow to cool slightly before serving or freezing for meal prep.
