- 2 medium zucchini (600 g)
- Salt to taste
- Black pepper to taste
- 1/4 teaspoon ground nutmeg (1 g)
- 1/2 teaspoon oregano (1 g)
- 1–2 tablespoons olive oil
- 3/4 cup flour (100 g)
- 3/4 cup water (200 ml)
- 1 1/2 cups breadcrumbs (150 g)
- 1 cup grated Parmesan (100 g)
- 1/2 teaspoon smoked paprika (1 g)
- 1/4 teaspoon granulated garlic (1 g)
- 2/3 cup Greek yogurt (150 g)
- 2 cloves garlic (8 g)
- 2 tablespoons lime juice
- 1/4 cup dill (10 g)
Method
- Slice the zucchini into rings and sprinkle with salt to draw out moisture.
- Prepare the seasoned centers by mixing black pepper, salt, ground nutmeg, oregano, and olive oil.
- Make the batter by combining flour, salt, and water until smooth.
- Mix breadcrumbs, grated Parmesan, smoked paprika, and granulated garlic for the breading.
- Prepare the lime yogurt sauce by blending Greek yogurt, garlic, lime juice, dill, and salt.
- Coat the zucchini rings with the batter, then dip into the Parmesan breadcrumb mixture.
- Place the rings in the air fryer, overlapping slightly to fit more while allowing even browning.
- Air fry until golden and crispy.
