Air-Fryer Zucchini Rings with Parmesan Crust

Ingredients

• 2 medium zucchini (600 g)
• Salt to taste
• Black pepper to taste
• 1/4 teaspoon ground nutmeg (1 g)
• 1/2 teaspoon oregano (1 g)
• 1–2 tablespoons olive oil
• 3/4 cup flour (100 g)
• 3/4 cup water (200 ml)
• 1 1/2 cups breadcrumbs (150 g)
• 1 cup grated Parmesan (100 g)
• 1/2 teaspoon smoked paprika (1 g)
• 1/4 teaspoon granulated garlic (1 g)
• 2/3 cup Greek yogurt (150 g)
• 2 cloves garlic (8 g)
• 2 tablespoons lime juice
• 1/4 cup dill (10 g)

Method

1. Slice the zucchini into rings and sprinkle with salt to draw out moisture.
2. Prepare the seasoned centers by mixing black pepper, salt, ground nutmeg, oregano, and olive oil.
3. Make the batter by combining flour, salt, and water until smooth.
4. Mix breadcrumbs, grated Parmesan, smoked paprika, and granulated garlic for the breading.
5. Prepare the lime yogurt sauce by blending Greek yogurt, garlic, lime juice, dill, and salt.
6. Coat the zucchini rings with the batter, then dip into the Parmesan breadcrumb mixture.
7. Place the rings in the air fryer, overlapping slightly to fit more while allowing even browning.
8. Air fry until golden and crispy.
9. Serve the zucchini rings with the creamy lime yogurt sauce.
