Apple and Coconut Milk Dessert

Ingredients

• COCONUT MILK BASE
• 200 g desiccated coconut
• 150 g sugar
• 150 g plain flour
• 800 ml milk
• 50 g butter
• APPLE LAYER
• 2 apples, peeled and chopped
• 100 g sugar
• CREAM CHEESE TOPPING
• 200 g butter, softened
• 80 g icing sugar
• 400 g soft cream cheese
• Liquid food colouring, optional

Method

1. Line a baking tray or shallow dish with baking paper.
2. Combine the desiccated coconut, sugar and flour in a saucepan.
3. Gradually whisk in the milk until smooth.
4. Add the butter.
5. Cook over medium-low heat while stirring continuously.
6. Continue cooking until the mixture becomes thick and smooth.
7. Spread the coconut milk mixture evenly in the prepared dish.
8. Peel and chop the apples.
9. Cook the apples with the sugar in a small saucepan until softened.
10. Spread the apple mixture over the coconut layer.
11. Leave the dessert to cool to room temperature.
12. Beat the softened butter with the icing sugar until creamy.
13. Add the cream cheese and beat until smooth.
14. Add a small amount of food colouring, if using.
15. Spread or pipe the cream cheese topping over the cooled apple layer.
16. Cover with food-safe wrap.
17. Refrigerate for at least 4 hours.
18. Slice and serve chilled.
