Apple Cake with Maple Frosting
This Melt-in-your-mouth Apple cake is a delicious celebration of fall from my NEW BOOK. Filled with fresh apple and smothered in Browned Butter maple vanilla frosting it has your favorite fall flavors with a kiss of thyme and lashings of apple butter between the layers.

- 3 cups or 360 grams of all-purpose flour
- 2 teaspoons of baking powder
- 1 teaspoon of kosher salt
- 1 cup or 226 grams of room-temperature butter
- 1 1/4 cups of granulated sugar
- 1 cup of packed light brown sugar
- 4 large room-temperature eggs
- 3 Honeycrisp apples
Method
- Set oven to 350°F and butter and flour two nine-inch cake pans, optionally lining with parchment paper.
- Sift together in a large bowl: 3 cups all-purpose flour, 2 teaspoons baking powder, 1 teaspoon kosher salt.
- Cream 1 cup butter and 1 1/4 cups granulated sugar in a stand mixer until light and fluffy, about 1 minute.
- Add 1 cup packed light brown sugar and mix for about 5 minutes.
- Crack four large eggs into a bowl to check for shells, then add eggs to the mixture one at a time, mixing well.
- Peel and grate three Honeycrisp apples.
- Distribute the batter evenly into the prepared cake pans and smooth the tops.
- Bake for 30 to 35 minutes at 350°F or until a skewer inserted in the middle comes out clean.
- While the cake bakes, brown 1 cup unsalted butter over medium heat until light amber, about 10-15 minutes, stirring occasionally.
