Ingredients

  • Coconut oil for the pan
  • 3 tablespoons plus 1/3 cup almond butter
  • 1 tablespoon plus 2/3 cup sugar
  • 1 teaspoon plus 1/2 cup virgin coconut oil, gently warmed to liquefy
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon Diamond Crystal kosher salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cardamom
  • 2 large eggs
  • 1 cup mashed banana
  • 1/3 cup plain whole milk Greek yogurt
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted roasted almonds (optional)

Method

  1. Preheat oven and prepare the loaf pan by greasing it with coconut oil.
  2. Swirl almond butter on top of the batter before baking.
  3. Mash the bananas until smooth.
  4. Mix the dry ingredients: flour, baking powder, salt, baking soda, and ground cardamom.
  5. Mix the wet ingredients: eggs, mashed bananas, Greek yogurt, vanilla extract, and warmed coconut oil.
  6. Combine the wet ingredients into the dry ingredients and mix until just combined.
  7. Pour the batter into the prepared loaf pan.
  8. Bake in the preheated oven until a toothpick inserted into the center comes out clean.
  9. Let the banana bread cool before serving.

Helpful tips

  • Use very ripe bananas for the best flavour and texture.
  • Mix the batter only until the flour is incorporated.
  • Swirl the almond butter lightly over the top rather than mixing it completely into the batter.
