- Coconut oil for the pan
- 3 tablespoons plus 1/3 cup almond butter
- 1 tablespoon plus 2/3 cup sugar
- 1 teaspoon plus 1/2 cup virgin coconut oil, gently warmed to liquefy
- 1 1/3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon Diamond Crystal kosher salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon ground cardamom
- 2 large eggs
- 1 cup mashed banana
- 1/3 cup plain whole milk Greek yogurt
- 1 teaspoon vanilla extract
- 1/2 cup unsalted roasted almonds (optional)

Method
- Preheat oven and prepare the loaf pan by greasing it with coconut oil.
- Swirl almond butter on top of the batter before baking.
- Mash the bananas until smooth.
- Mix the dry ingredients: flour, baking powder, salt, baking soda, and ground cardamom.
- Mix the wet ingredients: eggs, mashed bananas, Greek yogurt, vanilla extract, and warmed coconut oil.
- Combine the wet ingredients into the dry ingredients and mix until just combined.
- Pour the batter into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean.
