- 1 rack of pork back ribs
- 1 tbsp barbecue rub
- 1 tbsp honey
- 0.75 cup barbecue sauce
- 1 tbsp melted butter
- 1 tbsp brown sugar
- 1 pinch chili flakes
Method
- Purchase individual racks of pork back ribs with good marbling and remove the membrane by lifting it from the middle and pulling it off.
- Pat the ribs dry with paper towels.
- Trim any protruding pieces or excess fat from the ribs.
- Apply a layer of sweet barbecue rub on the side with the bones, pressing it gently into the meat and covering the edges.
- Flip the ribs so the meat side is up.
- Let the seasoned ribs sit at room temperature for about 45 minutes to allow the rub to absorb into the meat.
- Preheat the pellet grill to 275°F and let it reach the temperature.
- Place the ribs on the grill, bone side down, and cook for approximately 2.5 hours, brushing with melted butter every hour.
- After initial cooking, wrap the ribs in foil with a little butter, a splash of sweet barbecue sauce, brown sugar, and a pinch of chili flakes, then cook for an additional hour.
- Prepare the barbecue sauce by heating about 0.75 cup of sauce with a tablespoon of honey and additional barbecue spices.
- Unwrap the ribs and brush with the prepared barbecue sauce.
- Wrap the ribs in foil again, with the meat side up, and cook for another 10-15 minutes to set the sauce.
- Rest the ribs uncovered for 10-15 minutes before serving to allow the juices to redistribute.
