  • 5.74 oz/163 g dried noodle
  • 5.29 oz/150 g beef
  • 1 1/2 tsp soy sauce
  • 3/4 tsp dark soy sauce
  • 1 tbsp water
  • 1/4 tsp sugar
  • 1/3 tsp baking soda
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
  • 4 stalks of green onion
  • 5 cloves of garlic
  • 1/4 tsp dark soy sauce
  • 2 tbsp water
  • 6.34 oz/180 g cabbage
  • 3.17 oz/90 g onion
  • 1/8 tsp salt
  • 1/16 tsp sugar
  • 1 1/2 tsp rice wine
  • 2 1/4 tsp soy sauce
  • 3 tsp dark soy sauce
  • 1/8 tsp sugar
  • 1 tsp sesame oil, for finishing

Equipment

  • pot for boiling noodles
  • pan or wok for stir-frying

Method

10 steps
  1. Bring a pot of water to a boil and cook the dried noodles until slightly soft, then gently break them loose and remove from water.
  2. Saute chopped stem part of green onion in hot oil over medium-high heat.
  3. Add sliced beef and stir fry with green onion until about 50% cooked.
  4. Add minced garlic and a touch of dark soy sauce, continue stir frying until beef is evenly colored.
  5. Add a little water to the pan, let it boil and thicken into a sauce coating the beef, then remove beef from pan.
  6. Stir fry cabbage and onion strips with salt and sugar for about 40 seconds.
  7. Add rice wine, toss quickly to evaporate alcohol, then remove vegetables from pan.
  8. Add more oil and stir fry the cooked noodles until covered with oil and evenly colored with soy sauces and sugar.
  9. Return cabbage, onion, and beef to the pan, add leafy green parts of green onion and a touch of sesame oil.
  10. Toss everything together until evenly mixed and serve.
