Ingredients
- 600 g cottage cheese or tvorog
- 200 g sour cream
- 4 large eggs
- 120 g granulated sugar
- 50 g cornflour
- 1 pinch salt
- Additional sour cream, to serve
- Fresh blueberries or other berries, to taste
Method
- Preheat the oven to 160°C. Grease and line a suitable round baking tin or baking dish.
- Place the cottage cheese and 200 g sour cream in a large bowl. Blend or beat until the mixture is mostly smooth.
- Add the eggs, sugar and salt, then mix until evenly combined.
- Sift in the cornflour and mix again until no dry pockets remain. Avoid incorporating excessive air.
- Pour the mixture into the prepared tin and smooth the surface.
- Bake for approximately 40 minutes at 160°C, until the edges are set and the centre retains a slight wobble.
- Turn off the oven, open the door slightly and leave the cake inside for 10 minutes to cool gradually.
- Remove the cake and allow it to cool completely before releasing it from the tin.
- Serve with additional sour cream and fresh blueberries or other berries.
