  • 125 ml apple cider vinegar
  • 60 g brown sugar
  • 1 small cinnamon stick
  • a pinch of salt
  • 1 apple (Pink Lady or similar), grated
  • 100 ml water

Method

6 steps
  1. Place the grated apple, apple cider vinegar, brown sugar, cinnamon stick, and salt in a large saucepan.
  2. Heat over medium and stir until the sugar dissolves, then simmer with a lid on for 10 minutes.
  3. Prepare the cabbage by removing outer layers, cutting into quarters, removing the root, and slicing into even pieces.
  4. Add the sliced cabbage, water, and a pinch of salt to the saucepan with the apple mixture.
  5. Bring to medium-high heat, cook for 5 minutes, then reduce heat to low and simmer with the lid on.
  6. Stir every 10 minutes, adding more water if necessary, until the cabbage is tender and glazed, about 25-40 minutes.
