  • 1 full fat milk
  • 2 to 3 bay leaves
  • 4 to 5 cloves
  • 1 onion
  • bread (white fluffy loaf, center torn out)
  • salt
  • freshly ground black pepper
  • nutmeg
  • double cream

Method

10 steps
  1. Pour the full fat milk into a saucepan and gently heat it over low heat.
  2. Add 2 to 3 bay leaves and 4 to 5 cloves into the milk.
  3. Chop the onion in half, remove the skins, and add the onion halves to the milk.
  4. Simmer gently for about 10 to 15 minutes, stirring occasionally.
  5. Prepare the bread by tearing out the center of a white fluffy loaf into small pieces and placing them in a bowl.
  6. After infusing for about 10 minutes, remove the onion, bay leaves, and cloves from the milk.
  7. Add the torn bread to the milk in small handfuls, stirring well after each addition until reaching desired consistency.
  8. Season with salt and freshly ground black pepper.
  9. Grate some nutmeg into the mixture and stir well.
  10. Add a splash of double cream, stir thoroughly, and taste for seasoning adjustments.
