  • 1 1/2 tsp (6g) Onion Powder
  • 1 1/2 tsp (6g) Garlic Powder
  • 1 1/2 tsp (6g) Sweet Paprika
  • 1 1/2 tsp (3g) Dried Oregano
  • 1 1/2 tsp (3g) Dried Thyme
  • 1 tsp (2g) Chilli Powder
  • Salt
  • 3 Chicken Breast, Halved
  • Cajun Spice Mix (4 1/2 tsp or 12g)
  • 1 Small Brown Onion, Finely Diced
  • 3 Garlic Cloves, Grated
  • 300g Basmati Rice, Washed
  • 600ml Cold Water
  • 1/2 Cup (125g) Mayonnaise
  • 2 1/2 tsp Cajun Mix
  • Avocado Spray Oil
  • Seasoning to Taste

Method

  1. Mix onion powder, garlic powder, sweet paprika, dried oregano, dried thyme, and chili powder to prepare the Cajun Spice Mix.
  2. Season the chicken breasts with Cajun Spice Mix and spray with avocado oil.
  3. Cook the chicken until juicy and spicy, then set aside.
  4. Finely dice the small brown onion and grate the garlic cloves.
  5. Cook the rice by combining washed basmati rice with cold water and a pinch of salt, then bring to a boil and simmer until fluffy.
  6. Mix mayonnaise with Cajun Mix and seasoning to prepare Cajun Mayonnaise.
  7. Serve the cooked chicken over the fluffy rice and top with Cajun Mayonnaise.
