- 2¼ cups all-purpose flour (270g)
- 1 tablespoon cornstarch
- 1 teaspoon baking soda
- 1 teaspoon salt
- ¾ cup unsalted butter (melted and cooled slightly (170g))
- 1 cup packed light brown sugar (220g)
- ⅔ cup granulated sugar (133g)
- 2 large eggs (room temperature)
- 1 tablespoon vanilla extract
- 2 cups semi-sweet chocolate chips (divided (360g))
Method
- Preheat oven and line an 8x8 inch dish with parchment paper or foil.
- Whisk together 2¼ cups all-purpose flour, 1 tablespoon cornstarch, 1 teaspoon baking soda, and 1 teaspoon salt. Set aside.
- In a large bowl, combine ¾ cup melted butter, ⅔ cup granulated sugar, and 1 cup packed light brown sugar. Mix until a thick slurry forms.
- Add 1 tablespoon vanilla extract and 2 room temperature eggs to the butter and sugar mixture. Whisk until combined.
- Fold the dry ingredients into the wet mixture using a spatula until mostly incorporated.
- Add 2 cups semi-sweet chocolate chips and, optionally, chopped toasted nuts if desired, and fold to combine.
- Pour the batter into the prepared dish and bake for 30 minutes for a gooey center or an additional 5-10 minutes for a more set texture.
- Remove from oven and let set. Once cooled, lift out using the parchment paper and cut into bars.
