  • 190 g butter
  • 245 g dark chocolate
  • 250 g white sugar
  • 90 g toasted chopped hazelnuts or walnuts
  • 160 g plain flour
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 tsp honey
  • 1 tsp black treacle or molasses
  • 4 large eggs

Method

9 steps
  1. Preheat the oven to 180 degrees Celsius and prepare a lightly buttered and cocoa-dusted baking tray.
  2. Melt 190 g butter and 245 g dark chocolate in short bursts in the microwave, stirring between bursts.
  3. Add 1 tsp of instant espresso coffee, 1 tsp vanilla extract, 1 tsp honey, 1/2 tsp cinnamon, and 1/4 tsp salt to the melted chocolate mixture and stir.
  4. In a separate bowl, whisk 4 large eggs with 250 g white sugar until frothy and the sugar is dissolved.
  5. Fold the egg mixture into the melted chocolate mixture.
  6. Gently fold in 160 g plain flour and 90 g toasted chopped hazelnuts, trying not to deflate the eggs.
  7. Pour the batter into the prepared baking tray and smooth the top.
  8. Bake in the preheated oven for 20 minutes.
  9. Let the brownies cool slightly, then dust with icing sugar and slice.
