Whole recipe (8 servings): 2000 kcal
- 1 large onion, finely chopped
- 2 celery sticks, finely chopped
- 50 g butter
- 3 tbsp olive oil
- 2 garlic cloves, crushed
- 200 g chestnuts, cooked and chopped
- 130 g fresh breadcrumbs
- 2 tbsp fresh parsley, chopped / 1/2 tsp dried
- 1 tbsp fresh sage, chopped / 1 tsp
- Zest of 1 lemon
- Salt and freshly ground black pepper
- 1 egg, beaten
- 200 ml chicken stock
Method
10 steps- Finely chop the onion and celery sticks.
- Crush the garlic cloves.
- Saute the onion, celery, garlic, and herbs in a pan with butter and olive oil.
- Add cooked and chopped chestnuts to the pan and cook together.
- Zest the lemon and add the zest to the mixture.
- Season with salt, pepper, and dried thyme if using.
- Mix the cooked vegetable and chestnut mixture with breadcrumbs, beaten egg, and stock.
- Combine all ingredients thoroughly in a bowl.
- Transfer the mixture to a baking dish or stuffing cavity.
- Bake in a preheated oven at 165°C (fan) / 180°C for about 20-25 minutes until golden brown.
