  • 1 pear
  • 500 ml water
  • 100 g sugar
  • 1/2 tsp citric acid
  • 60 g candied orange peel
  • 30 g candied lemon peel
  • 30 g dried pears
  • 60 g dried cranberries
  • 60 g whole almonds
  • 60 g pistachios
  • 110 g milk
  • 6-7 g dried yeast
  • 250 g flour
  • 30 g sugar
  • 22 g almond flour
  • 50 g egg
  • 4 g salt
  • 105 g unsalted butter
  • 120 g marzipan

Method

6 steps
  1. Soak the dried pears in water with sugar and citric acid.
  2. Make the leaven by combining 60 g of milk, dried yeast, 80 g of flour, and 1 tbsp of sugar, then let it rise.
  3. Mix the remaining flour, sugar, almond flour, salt, and the leaven, then knead the dough.
  4. Incorporate the softened marzipan into the dough.
  5. Shape the dough into a loaf, brush with melted butter, and bake slowly.
  6. Finish by brushing with melted butter again and dusting with powdered sugar.
