Whole recipe (10 servings): 2250 kcal

  • ½ cup butter
  • 1 medium onion, finely diced
  • 4 stalks celery, finely diced
  • 1 cup chopped fresh parsley
  • 2 tsp dried summer savoury
  • Salt (see note, below)
  • 12 to 14 cups bread crumbs and cubes
  • 1 cup or more turkey drippings or turkey or chicken stock

Method

9 steps
  1. Melt the butter in a very large, wide frying pan over medium.
  2. Add onions and celery and cook slowly, stirring occasionally, until vegetables are completely tender.
  3. Remove the heat and stir in the parsley and savoury.
  4. Combine the cooked vegetables and herbs with the bread in a giant mixing bowl.
  5. Stir gently but thoroughly.
  6. Transfer the mixture to a greased 9 x 13-inch baking dish (or similar).
  7. Drizzle the drippings over the dressing.
  8. Cover tightly with foil and bake at 325F for 30 minutes.
  9. Remove the foil and bake for another 5 to 20 minutes or until it’s as crispy on top as you like.
