Ingredients

  • 1/4 white onion, diced
  • 1/4 bell pepper, diced
  • 1 green onion, chopped
  • 4 garlic cloves, minced
  • 1 pound ground beef
  • 1 pound mild Italian sausage
  • 36 ounces pasta sauce
  • 8 ounces sour cream
  • 5 ounces cottage cheese
  • 4 ounces room temperature cream cheese
  • 1 to 2 chopped green onions
  • Salt to taste
  • Pepper to taste
  • 16 ounces spaghetti
  • 16 ounces grated mozzarella cheese
  • Grated Parmesan cheese
  • Dried parsley

Method

  1. 1

    Dice a quarter of a white onion, a quarter of a bell pepper, one green onion, and four garlic cloves.

    Cook one pound of ground beef on high heat, breaking it down until crumbly, and strain the fat.

    Reduce heat to medium and add one pound of mild Italian sausage, cooking until mostly done.

    Add the chopped onions and bell peppers, cook until onions are translucent.

    Add the minced garlic and cook for an additional minute.

    Season the mixture with salt and pepper to taste.

    Add 36 ounces of pasta sauce and taste, adjusting with sugar as needed to balance acidity.

    Let the sauce simmer on low for 30 to 45 minutes, stirring occasionally.

    Prepare spaghetti by adding salt to a pot of boiling water, then add 16 ounces of spaghetti, cooking until al dente (8 to 10 minutes).

    In a bowl, mix together 8 ounces of sour cream, 5 ounces of cottage cheese, 4 ounces of room temperature cream cheese, chopped green onions, salt and pepper to taste.

    Spread some meat sauce evenly over the bottom of a 9 by 13 inch casserole dish.

    Add all of the cooked spaghetti to the dish, spreading it out evenly.

    Pour all of the cheese sauce over the spaghetti and spread it evenly.

    Add the remaining meat sauce on top of the cheese sauce and spread gently.

    Cover with 16 ounces of grated mozzarella cheese and sprinkle with dried parsley.

    Bake for 30 to 45 minutes, or until cheese is melted and golden brown.

    Optional: Add chopped green onions or fresh parsley as a garnish during the last 15 minutes of baking.
