Whole recipe (12 servings): 2028 kcal

  • 350 g strong bread flour
  • 7 g instant dry yeast
  • 150 ml lukewarm milk (37C)
  • 50 g sugar
  • 1 tsp salt
  • 1/2 tsp cardamom
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • Zest of 1 lemon
  • 1 large egg
  • 75 g softened butter
  • 200 g mixed dried fruit
  • 3 tbsp Rum
  • 30 g mixed candied peel
  • 30 g slivered almonds
  • 200 g marzipan

Method

9 steps
  1. Mix the strong bread flour, instant dry yeast, sugar, salt, cardamom, nutmeg, cinnamon, and lemon zest.
  2. Add the lukewarm milk, egg, and softened butter to the dry ingredients and knead until smooth.
  3. Incorporate the mixed dried fruit, candied peel, and slivered almonds into the dough.
  4. Roll out the marzipan to the same length as the dough.
  5. Shape the dough into a loaf, placing the marzipan inside during shaping.
  6. Preheat the oven to 175C (conventional).
  7. Bake the stollen for 45 minutes, covering loosely with tin foil if it darkens too much.
  8. Once baked, brush with melted butter and cool completely.
  9. Siege with icing sugar before serving.
