Whole recipe (1 serving): 320 kcal

  • 250 ml water
  • 3 tbsp golden caster sugar
  • 1 cinnamon stick
  • 4 whole cloves
  • 1/4 tsp ground nutmeg
  • 1 inch fresh ginger, thinly sliced
  • 1 cup whole milk
  • 2 tbsp drinking chocolate powder
  • 2 tbsp gingerbread syrup
  • whipped cream or marshmallows, optional, for serving

Method

13 steps
  1. Peel about 1 inch of fresh ginger using the back of a spoon.
  2. Slice the ginger thinly with a sharp knife.
  3. Pour 250 ml of water into a pan, add 3 tbsp of sugar, one cinnamon stick, and some cloves.
  4. Grate nutmeg into the pan using a fine grater.
  5. Add the ginger slices to the pan.
  6. Turn on the gas and stir the mixture.
  7. Bring to a boil, then reduce heat and simmer for about 5 minutes.
  8. Remove from heat and let sit and cool for 5 minutes.
  9. Meanwhile, make hot chocolate by heating milk (or water) in another pan and adding drinking chocolate, stirring until melted.
  10. Strain the gingerbread syrup into a jug, discarding solids.
  11. Fill a mug with the hot chocolate.
  12. Top with gingerbread syrup and stir to taste.
  13. Add toppings such as squirty cream dusted with drinking chocolate, additional syrup, marshmallows, or whipped cream as desired.
