Grandma's Autumn Apple Pie

Ingredients

• 3 eggs eggs
• 1 pinch salt (for the dough)
• ¼ cup sugar (for the dough)
• 5 tbsp melted butter (for the dough)
• 1 ½ cups all-purpose flour (for the dough)
• 2 tsp baking powder (for the dough)
• 3 units ripe apples (peeled and cubed)
• 2 tbsp brown sugar (for the filling)
• 1 tsp cinnamon (for the filling)
• ¼ tsp nutmeg (for the filling)
• 2 tsp brandy or Calvados (optional for the filling)
• 3 egg whites egg whites (for the cream)
• 1 pinch salt (for the cream)
• ¾ cup powdered sugar (for the cream)
• 1 pinch citric acid (or a few drops lemon juice, for the cream)
• 1 ⅔ cups sour cream or unsweetened yogurt (for the cream)

Method

1. In a bowl, whisk together eggs, salt, and sugar until smooth. Add melted butter and mix well.
2. Peel and cube the apples. In a pan, caramelize them with brown sugar. Add cinnamon, nutmeg, and a splash of brandy. Cook until soft.
3. Sift flour with baking powder, add to the egg mixture, and stir until smooth. Spread dough into a baking dish (8×8 inch / 20×20 cm), forming small edges.
4. Spread caramelized apples over the dough.
5. Beat egg whites with salt until foamy. Gradually add powdered sugar and lemon juice. Then gently mix in sour cream or yogurt until creamy.
6. Spread the cream evenly over apples and sprinkle leftover dough on top. Bake at 350°F (180°C) for 30 minutes until golden and fragrant.
7. Let it cool slightly. The pie will be soft, tender, and full of flavor.
