- 3 units ripe apples (peeled and cubed)
- 2 tbsp brown sugar (for the filling)

- 2 tsp brandy or Calvados (optional for the filling)

Method
- In a bowl, whisk together eggs, salt, and sugar until smooth. Add melted butter and mix well.
- Peel and cube the apples. In a pan, caramelize them with brown sugar. Add cinnamon, nutmeg, and a splash of brandy. Cook until soft.
- Sift flour with baking powder, add to the egg mixture, and stir until smooth. Spread dough into a baking dish (8×8 inch / 20×20 cm), forming small edges.
- Spread caramelized apples over the dough.
- Beat egg whites with salt until foamy. Gradually add powdered sugar and lemon juice. Then gently mix in sour cream or yogurt until creamy.
- Spread the cream evenly over apples and sprinkle leftover dough on top. Bake at 350°F (180°C) for 30 minutes until golden and fragrant.
- Let it cool slightly. The pie will be soft, tender, and full of flavor.
