- 130g rolled oats (1¼ cups)
- 21g cocoa powder (2 tbsp)
- 20g ground coconut (¼ cup)
- ½ tbsp baking powder
- ½ tsp baking soda
- 2 eggs
- Zest of 1 lime
- 55g honey (3 tbsp)
- 20g melted butter (3 tbsp) or coconut oil
- ½ tbsp vinegar
- 80g milk (½ cup)
- 1 tbsp cocoa powder (for topping)
- 5 pitted dates (for topping)
- 110g Greek yogurt (for topping)
- 1 tbsp milk (for topping, add more if needed)
- Desiccated coconut for garnish
Method
- Preheat your oven or prepare your cooking method as needed.
- In a bowl, combine rolled oats, cocoa powder, ground coconut, baking powder, and baking soda.
- In another bowl, whisk eggs, lime zest, honey, melted butter or coconut oil, vinegar, and milk.
- Mix the wet ingredients into the dry ingredients until well combined.
- Pour the batter into a suitable baking dish or mold.
- Bake or cook the cake for about 5 minutes or until soft and fluffy.
- For the topping, blend cocoa powder, pitted dates, Greek yogurt, and milk until smooth.
- Spread the creamy date-yogurt frosting over the cooled cake.
- Garnish with desiccated coconut.
