  • sprouts
  • red onion
  • thyme
  • rosemary
  • salt
  • pepper
  • olive oil
  • honey
  • olive oil (for frying)
  • black pepper (for finishing)
  • freshly chopped parsley (for finishing)
  • eggs (optional, for topping)

Method

15 steps
  1. Preheat oven to gas mark six or equivalent.
  2. Pour sliced potatoes, carrots, parsnips, sprouts, and quartered red onion into a deep roasting tray.
  3. Scatter thyme and rosemary over the vegetables.
  4. Season with salt and pepper.
  5. Gloss vegetables thoroughly with olive oil and mix well.
  6. Roast in the oven on the top shelf for 30 minutes.
  7. Remove sprouts at the 30-minute mark and set aside.
  8. Continue roasting vegetables for another 25 minutes.
  9. Add sprouts back into the tray, coat with honey, and roast for an additional 5 to 10 minutes.
  10. Pour roasted vegetables into a dish and serve hot or cold.
  11. For leftovers, mash the vegetables in a large bowl.
  12. Form patties from the mashed vegetables.
  13. Heat olive oil in a frying pan over medium heat.
  14. Cook patties for 4-5 minutes on each side until golden brown.
  15. Optional: top with a poached egg, drizzle with olive oil, season with black pepper, and garnish with chopped parsley.
