Honey Sesame Chicken

Ingredients

• 450 gms Boneless Chicken thighs, cut into 1” pieces
• 1/2 tsp Pepper Powder
• 3/4 tsp Salt
• 1.5 tsp Grated Garlic (4-5 cloves)
• 1 Whisked Egg
• 50 gms Corn Flour (measure for marination)
• 2.5 tbsp Tomato Ketchup
• 1.5 tbsp Dark Soy Sauce
• 2 tbsp Honey
• 2 tbsp White Sugar
• 3 tsp White Vinegar
• 3 tbsp Water
• 1.5 tsp Corn Flour (for slurry)
• 3 tbsp Water (for slurry)
• 1.5 tbsp Sesame Oil
• 2 tsp White Sesame Seeds
• 3 tbsp Spring Onion Greens
• Oil for deep frying

Method

1. Cut the boneless chicken thighs into 1” pieces. Marinate with pepper powder, salt, grated garlic, whisked egg, and corn flour. Mix well and set aside for 30 minutes.
2. Take a small bowl and add all the ingredients for the sauce: tomato ketchup, dark soy sauce, honey, white sugar, white vinegar, and water. Mix and set aside, ensuring the sugar is dissolved.
3. Heat oil in a pan or wok for deep frying.
4. Drop in the battered chicken pieces one at a time to avoid crowding. Fry on medium heat for around 5-6 minutes until golden. Remove and keep on a plate. Fry remaining in batches.
5. Take a wok and heat it. Add the sauce mixture, stir on medium heat for 2 minutes until it starts thickening.
6. Add the corn slurry, cook for 1-2 minutes, then add the fried chicken pieces.
7. Add sesame oil, stir fry on high heat for 2 minutes until chicken is coated with the sauce.
8. Once nearly thickened, add sesame seeds, mix, then add chopped spring onion greens. Stir fry for 1 minute and serve hot.
