Method

10 steps
  1. Fill a pot with 2 to 3 inches of water and bring it to a boil.
  2. Peel, wash and chop the potatoes into 1 inch pieces and place them in a steamer basket.
  3. Steam the potatoes for 12 to 15 minutes or until fork tender, then set aside.
  4. Heat cooking oil in a pan and add onion with 1/4 teaspoon salt; fry on medium to medium-high heat until onion starts to brown (about 5 to 6 minutes).
  5. Add finely chopped garlic and ginger; fry for 1 to 2 minutes until fragrant.
  6. Add tomato paste and spices (turmeric, paprika, ground cumin, ground coriander, cayenne pepper); mix well and fry for a few seconds.
  7. Add green peas and water; fry on medium heat until water is cooked out.
  8. Add steamed potatoes and salt; mix thoroughly to coat potatoes with spices and fry for another 2 to 3 minutes, breaking half of the potatoes with a spatula.
  9. Turn off the stove and garnish with ground black pepper, chopped cilantro, and lime or lemon juice.
  10. Mix well and serve as a side dish, or use as filling for wraps or sandwiches.
