Jack-o'-Lantern Stuffed Peppers
A fun, kid-friendly dish where orange bell peppers are carved to look like jack-o'-lanterns and stuffed with seasoned ground beef and rice, then baked until tender.

Method
- Identify the largest face or section of the orange bell peppers to carve facial features.
- Use a small knife to cut triangle eyes, a triangle nose, and a mouth with teeth, resembling a jack-o'-lantern face.
- Cut around the top of each pepper to remove the seed pod and trim out white membrane and loose seeds.
- Trim the seed pod away from the top and place the carved peppers in a lightly oiled baking dish.
- Season the ground beef with kosher salt, black pepper, cayenne, Worcestershire sauce, minced garlic, and sliced green onions.
- Add melted butter and ketchup to the beef mixture.
- Mix cooked rice into the seasoned beef mixture.
- Stuff the mixture into the carved peppers evenly.
- Place the tops back on the peppers and set them on a pan.
- Loosely wrap the peppers with foil and bake at 400°F (200°C) for 1 hour.
- Remove the foil and bake for an additional 10-15 minutes until peppers are tender and slightly browned.
- Transfer to a plate with spicy tomato sauce and serve.
