- Shirataki or sweet potato starch noodles
- Shiitake mushrooms, soaked in water for 2 hours and sliced
- Beef sirloin, sliced
- Garlic, minced
- Sugar
- Soy sauce
- Sesame oil
- Egg yolk
- Egg white
- Salt
- Spinach, cleaned
- Carrots, sliced
- Red bell pepper, sliced
- Green onions, sliced
- Sesame seeds
Method
- Soak dried shiitake mushrooms in water for 2 hours, then slice.
- Marinate sliced beef with soy sauce, sugar, garlic, and sesame oil.
- Cook spinach in boiling water for about 30 seconds to 1 minute, then squeeze out excess water and season with soy sauce and sesame oil.
- Cook noodles in boiling water until transparent and tender, about 1 minute, then drain and cut into shorter lengths.
- In a pan, heat sesame oil, then stir-fry sliced onions and green onions until translucent.
- Add sliced mushrooms and cook until shiny and tender, then transfer to a plate.
- Stir-fry carrots and red bell peppers separately for about 20 seconds each.
- Cook marinated beef and mushrooms until beef is no longer pink and mushrooms are tender and shiny.
- In the same pan, add cooked noodles, seasoned with soy sauce and sugar, and stir-fry everything together.
- Add cooked vegetables and beef to the noodles, mixing well.
- Finish by adding sesame seeds and sliced egg yolk, mixing gently.
