Ingredients
- 1 1/2 tbsp sticky rice
- 2 tbsp water
- 250 g ground pork
- 3 tbsp thinly sliced shallots
- 2 tbsp fish sauce
- 2 tbsp lime juice
- chili flakes, to taste
- 1 1/2 tbsp toasted rice powder
- 1/4 cup roughly chopped mint leaf
- 2 tbsp cilantro
- 1 tbsp green onions
Method
- Toast 1 1/2 tablespoon of sticky rice in a dry sauté pan over medium high heat, stirring until deep golden brown, then grind into a powder using a coffee grinder or mortar and pestle.
- Bring 2 tablespoons of water to a boil in a pot.
- Add 250 g of ground pork to the boiling water and cook until done.
- Turn off the heat and transfer the cooked pork to a mixing bowl.
- Add about 3 tablespoons of thinly sliced shallots to the pork and stir to wilt and break up the rings.
- Add 2 tablespoons of fish sauce, 2 tablespoons of lime juice, chili flakes to taste, and 1 1/2 tablespoons of toasted rice powder to the mixture.
- Add 1/4 cup of roughly chopped mint leaves, 2 tablespoons of cilantro, and 1 tablespoon of green onions.
- Mix everything thoroughly and taste, adjusting seasoning if needed.
- Serve with sticky rice, lettuce wraps, or as desired, garnished with mint leaves and dried chilies.
