- 2 tsp soy sauce
- 1/2 tsp dark soy sauce
- 2 tsp rice wine
- 1/2 tsp salt
- 1/4 tsp white pepper powder
- 1.4 oz/40 g ginger
- 5.64 oz/160 g onion/shallot/pearl onion
- 2 cloves of garlic
- 1 tbsp rice wine
- 6 tbsp lemon juice(about 2 lemons)
- 1 cup water
- 1 tbsp brown sugar
- 1/4 tsp salt
- 1 tsp dark soy sauce
- 1/4 tsp black pepper
- 2 lemons’ zest
- 1 tsp sesame oil

Method
15 steps- Rinse the chicken wings with cold water and pat dry.
- Marinate the wings with soy sauce, dark soy sauce, rice wine, salt, and white pepper powder for at least 20 minutes.
- Cut two cloves of garlic into slices and ginger into thin slices.
- Cut some shallot or onion into thin pieces.
- Use a zest grater to grate the lemon zest and squeeze out the lemon juice.
- Add oil to a hot pan over medium high heat.
- Saute the onion and ginger until the onion starts to get soft and brown on the edges.
- Add the garlic slices and sauté for another 30 seconds, then remove from the pan.
- Pan fry the chicken wings until the bottom is golden brown, then turn and fry the other side until golden brown.
- Add rice wine, lemon juice, water, onion, ginger, and garlic to the pan.
- Gently stir to mix and bring to a boil.
- Add brown sugar and salt, then cover and cook until the liquid reduces by about half (~4 minutes).
- Turn the wings over, cover, and cook until the liquid reduces by half again.
- Remove the lid, turn the wings over to ensure even color, then add dark soy sauce, crushed black pepper, lemon zest, and sesame oil.
- Mix everything evenly and serve.
