  • 35.27 oz/1000 g chicken wing
  • 2 tsp soy sauce
  • 1/2 tsp dark soy sauce
  • 2 tsp rice wine
  • 1/2 tsp salt
  • 1/4 tsp white pepper powder
  • 1.4 oz/40 g ginger
  • 5.64 oz/160 g onion/shallot/pearl onion
  • 2 cloves of garlic
  • 1 tbsp rice wine
  • 6 tbsp lemon juice(about 2 lemons)
  • 1 cup water
  • 1 tbsp brown sugar
  • 1/4 tsp salt
  • 1 tsp dark soy sauce
  • 1/4 tsp black pepper
  • 2 lemons’ zest
  • 1 tsp sesame oil

Method

15 steps
  1. Rinse the chicken wings with cold water and pat dry.
  2. Marinate the wings with soy sauce, dark soy sauce, rice wine, salt, and white pepper powder for at least 20 minutes.
  3. Cut two cloves of garlic into slices and ginger into thin slices.
  4. Cut some shallot or onion into thin pieces.
  5. Use a zest grater to grate the lemon zest and squeeze out the lemon juice.
  6. Add oil to a hot pan over medium high heat.
  7. Saute the onion and ginger until the onion starts to get soft and brown on the edges.
  8. Add the garlic slices and sauté for another 30 seconds, then remove from the pan.
  9. Pan fry the chicken wings until the bottom is golden brown, then turn and fry the other side until golden brown.
  10. Add rice wine, lemon juice, water, onion, ginger, and garlic to the pan.
  11. Gently stir to mix and bring to a boil.
  12. Add brown sugar and salt, then cover and cook until the liquid reduces by about half (~4 minutes).
  13. Turn the wings over, cover, and cook until the liquid reduces by half again.
  14. Remove the lid, turn the wings over to ensure even color, then add dark soy sauce, crushed black pepper, lemon zest, and sesame oil.
  15. Mix everything evenly and serve.
