- 2 large potatoes
- 1 cup cheddar cheese, shredded
- 3 green onions, chopped
- Bacon bits
- Rotisserie chicken, shredded
- 1/2 stick butter
- Salt
- Pepper
- Extra virgin olive oil
- Sour cream
- Chives
Method
- Wash and scrub the potatoes, then dry them.
- Coat the potatoes with olive oil.
- Wrap each potato in foil and poke around 10 times with a fork.
- Preheat oven to 350°F (177°C).
- Bake the potatoes in the oven for 1 hour, adding an additional 15 minutes if needed.
- Remove potatoes from oven and let cool slightly.
- Open the potatoes carefully, discarding the skins, and scoop out the potato flesh into a bowl.
- Add 1/2 stick of butter to the potato flesh and mix well.
- Taste and season with salt and pepper as needed.
- Refill the potato skins with the mashed potato mixture.
- Top with shredded chicken and shredded cheddar cheese.
- Return to the oven and bake for about 5-6 minutes until cheese melts.
- Add additional toppings like sour cream, chopped chives, and bacon bits as desired.
