- 100 ml warm milk
- 100 ml warm water
- 100 ml oil
- 1 egg (white for dough, yolk for glaze)
- 1 tbsp sugar
- 1 tbsp dry baker's yeast
- 1 tsp salt
- 350-400 g flour
- 4 tbsp mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha sauce
- 1 tsp ketchup
- 1 tsp honey
- 1 tsp lemon juice
- pinch garlic powder
- pinch smoked paprika (optional)
- 500 g chicken fillet
- 1 tsp paprika
- 1/2 tsp ginger
- 1 tsp garlic
- 2 tbsp lemon juice
- 1 egg
- 2 tsp cornstarch
- 1 tbsp soy sauce
- flour and cornstarch for coating
- oil for frying
Method
- Prepare the dough by mixing warm milk, water, oil, egg white, sugar, yeast, salt, and flour.
- Knead the dough and let it rise.
- Shape the dough into sandwich buns and brush with egg yolk.
- Bake the buns until golden and soft.
- Mix mayonnaise, sweet chili, sriracha, ketchup, honey, lemon juice, garlic powder, and smoked paprika to make the dynamite sauce.
- Cut chicken fillets and marinate with paprika, ginger, garlic, lemon juice, egg, cornstarch, and soy sauce.
- Coat the chicken pieces with flour and cornstarch mixture.
- Fry the chicken until crispy and cooked through.
- Assemble the sandwich with the bun, fried chicken, and dynamite sauce.
