Method

5 steps
  1. Scoop out the seeds and separate them from the pumpkin fibres in a bowl of water.
  2. Drain and dry on a clean cloth for several hours or overnight.
  3. Preheat the oven to 200°C (400°F). Transfer the dry seeds to a clean baking tray without the cloth.
  4. Toss with a light coating of olive oil and seasoning. Spread in a single layer.
  5. Roast for 12–15 minutes, checking near the end, until browned and crisp. Cool before serving.
