- g broccoli, stalks trimmed and cut into small chunks
- g plum tomatoes, halved or quartered
- g whole wheat pasta
- tablespoon olive oil
- teaspoon fennel seeds
- cloves garlic, sliced
- onions, sliced
- chilies, sliced (use 1 or 2 depending on heat preference)
- tablespoon vinegar
- g Parmesan cheese, grated
- dried oregano, about half a bunch or 1 teaspoon dried
Method
- Boil the sausages in water for a few minutes, then slice into discs.
- Add broccoli stalks and chilies to boiling water and cook for a couple of minutes until softened.
- Heat olive oil in a pan, add fennel seeds, and cook for a minute.
- Add sliced garlic to the pan and cook for about a minute until fragrant.
- Add sliced onions and cook until softened and sweetened.
- Add the sliced sausages to the pan and cook until browned and firmed up.
- Stir in sliced chilies and oregano, cook for a few minutes to develop flavor.
- Add a splash of vinegar and cook until the vinegar evaporates, leaving fragrant tartness.
- Add plum tomatoes and a little water, then simmer for about 15 minutes.
- Cook the pasta in salted boiling water until nearly al dente, then add broccoli for the last 2 minutes.
- Drain the pasta and broccoli, then add to the sauce.
- Stir in grated Parmesan cheese and toss everything together.
- Serve with additional Parmesan on top.
