Ingredients
- 1 lb shrimp (raw or cooked), peeled, deveined and diced
- 1 cup lime juice, from 6 limes
- 1 cucumber, peeled and diced
- 1 large avocado
- 2 Roma tomatoes, diced
- 1/2 red onion, diced
- 1/4 bunch of cilantro, chopped
- 1 jalapeno, seeded and minced
- 1/4 tsp black pepper, or to taste
- 1 cup clamato juice
Method
- Shuck and rinse 1 lb shrimp, then transfer to a large mixing bowl.
- Pour lime juice over the shrimp until covered, using about 6 limes for fresh juice.
- Marinate the shrimp in the refrigerator for about 2 hours if raw, or 15 minutes if cooked.
- Dice 1/2 red onion and add to the bowl with the shrimp.
- Cut 1 English cucumber into cubes and add to the bowl.
- Dice 2 Roma tomatoes and add to the bowl.
- Cut 1 jalapeno in half, scrape out seeds, and process on a food processor or chop finely, then add to the bowl.
- Cut 1 large avocado into cubes and add to the bowl.
- Chop fresh cilantro and add to the bowl.
- Add 1 cup clamato juice to the mixture and stir well.
