Ingredients

  • 1 lb shrimp (raw or cooked), peeled, deveined and diced
  • 1 cup lime juice, from 6 limes
  • 1 cucumber, peeled and diced
  • 1 large avocado
  • 2 Roma tomatoes, diced
  • 1/2 red onion, diced
  • 1/4 bunch of cilantro, chopped
  • 1 jalapeno, seeded and minced
  • 1/4 tsp black pepper, or to taste
  • 1 cup clamato juice

Method

  1. Shuck and rinse 1 lb shrimp, then transfer to a large mixing bowl.
  2. Pour lime juice over the shrimp until covered, using about 6 limes for fresh juice.
  3. Marinate the shrimp in the refrigerator for about 2 hours if raw, or 15 minutes if cooked.
  4. Dice 1/2 red onion and add to the bowl with the shrimp.
  5. Cut 1 English cucumber into cubes and add to the bowl.
  6. Dice 2 Roma tomatoes and add to the bowl.
  7. Cut 1 jalapeno in half, scrape out seeds, and process on a food processor or chop finely, then add to the bowl.
  8. Cut 1 large avocado into cubes and add to the bowl.
  9. Chop fresh cilantro and add to the bowl.
  10. Add 1 cup clamato juice to the mixture and stir well.
