Ingredients

  • 3 1/2 lbs Russet Potatoes - Peeled & Cubed
  • 1 1/2 C Onion - Chopped
  • 4 - 5 Cloves Garlic - Minced
  • 1 lb Bacon - Cooked & Chopped
  • (Reserve 3 Slices for Garnish)
  • 1 Tbsp Parsley
  • 1/2 tsp Black Pepper
  • 32 oz Chicken Stock or Broth
  • 1/2 C Sour Cream
  • 2 C Cheddar Cheese
  • 4 Tbsp Butter
  • 1/3 C Flour
  • 1 Pt Heavy Cream
  • Chives

Method

  1. Add potatoes, onion, garlic, bacon, parsley, black pepper & chicken stock to slow cooker.
  2. Cook on high 2 - 2 1/2 hrs or until potatoes are fork tender.
  3. Melt 4 Tbsp butter in saucepan, add flour and cook for 1-2 mins.
  4. Add heavy cream and stir constantly until sauce thickens, about 5-6 mins.
  5. Add sauce to slow cooker and start to mash the potatoes to the desired consistency.
  6. Add sour cream & cheddar cheese, stir to combine.
  7. Serve with garnish of cheddar cheese, bacon & chives.
