Ingredients
- 3 1/2 lbs Russet Potatoes - Peeled & Cubed
- 1 1/2 C Onion - Chopped
- 4 - 5 Cloves Garlic - Minced
- 1 lb Bacon - Cooked & Chopped
- (Reserve 3 Slices for Garnish)
- 1 Tbsp Parsley
- 1/2 tsp Black Pepper
- 32 oz Chicken Stock or Broth
- 1/2 C Sour Cream
- 2 C Cheddar Cheese
- 4 Tbsp Butter
- 1/3 C Flour
- 1 Pt Heavy Cream
- Chives
Method
- Add potatoes, onion, garlic, bacon, parsley, black pepper & chicken stock to slow cooker.
- Cook on high 2 - 2 1/2 hrs or until potatoes are fork tender.
- Melt 4 Tbsp butter in saucepan, add flour and cook for 1-2 mins.
- Add heavy cream and stir constantly until sauce thickens, about 5-6 mins.
- Add sauce to slow cooker and start to mash the potatoes to the desired consistency.
- Add sour cream & cheddar cheese, stir to combine.
- Serve with garnish of cheddar cheese, bacon & chives.
