- 2 to 3 tablespoons olive oil
- 1 four-pound chuck roast, well marbled
- salt
- pepper
- 1 packet dry onion soup mix
- 1 cup water
- 3 carrots, chopped into 2-inch pieces
- 1 onion, chopped
- 3 potatoes, peeled and cut into pieces (Yukon Gold or red potatoes preferred)
- 1 stalk celery, finely chopped
Method
- Heat a large skillet over high heat and add 2 to 3 tablespoons of olive oil.
- Sear the four-pound chuck roast on all sides until it is nice and brown.
- Remove the skillet from heat and transfer the roast to the slow cooker.
- Add one packet of dry onion soup mix and one cup of water to the slow cooker.
- Chop three carrots into 2-inch pieces and add to the slow cooker.
- Chop one onion and add to the slow cooker.
- Peel three potatoes and cut into pieces, then add to the slow cooker.
- Finely chop one stalk of celery and add to the slow cooker.
- Cover and cook on low for 8 to 10 hours until the beef is fork tender.
