- CARAMEL
- 120 g sugar
- 140 ml double cream
- 100 g butter
- ICE CREAM
- 500 ml double cream, well chilled
- 150 g condensed milk
- 20 g cocoa powder
- 50 g roasted peanuts, chopped
- 7–8 chocolate cookies, roughly crushed
- CHOCOLATE SWIRL
- 200 g chocolate
- 2 tbsp vegetable oil
Method
- Place the sugar in a saucepan over medium-low heat.
- Allow it to melt gradually until amber in colour.
- Warm the 140 ml cream separately.
- Carefully stir the warm cream into the caramelised sugar.
- Add the butter.
- Stir until smooth.
- Leave the caramel to cool completely.
- Whip the 500 ml chilled cream to soft peaks.
- Fold in the condensed milk and cocoa powder.
- Fold in the cooled caramel.
- Add the chopped roasted peanuts.
- Fold in the crushed chocolate cookies.
- Melt the chocolate with the vegetable oil.
- Transfer half the ice-cream mixture to a freezer-safe container.
- Drizzle over some of the melted chocolate.
- Add the remaining ice-cream mixture.
- Drizzle over the remaining chocolate.
- Swirl gently with a skewer or knife.
- Cover the container.
- Freeze for at least 8 hours or overnight.
- Allow the ice cream to soften for a few minutes before serving.
