- 2 egg yolks, room temperature
- 1/2 tsp Vanilla extract
- 1/2 cup (60g) Flour
- 1 tsp (4g) Baking powder
- A pinch of salt
- 2 egg whites, room temperature
- 1/2 cup (100g) Sugar
- 3/4 cup (120g) Semi-sweet or milk chocolate
- 1 cup (226g) Cream cheese, room temperature
- 1/2 cup (68g) Powdered sugar
- 1/4 cup (22g) Unsweetened cocoa powder
- 1/2 tsp Vanilla extract
- 1 cup (240g) Heavy cream, cold

Method
- Melt butter and mix with cocoa powder and milk to form batter base.
- Whisk egg yolks and vanilla, then combine with batter base.
- Sift flour, baking powder, and salt; fold into batter.
- Whip egg whites with sugar until stiff peaks form.
- Gently fold egg whites into batter.
- Cook batter on stovetop to form cake discs.
- Melt semi-sweet chocolate and add to cake discs.
- Beat cream cheese, powdered sugar, cocoa powder, and vanilla to make mousse.
- Whip cold heavy cream and fold into cream cheese mixture.
- Fill cooked cake discs with chocolate mousse.
- Roll cakes into tubes carefully without cracking.
- Melt chocolate for decoration and drizzle over rolled cakes.
- Serve chilled or at room temperature.
