- 60 g strawberry jam (1/4 cup)
- 15 g granulated sugar (1 tbsp)
- 113 g unsalted butter (1/2 cup), softened
- 120 g powdered sugar (1 cup)
- 1 large egg
- 1 tbsp vanilla extract
- 55 ml vegetable or canola oil (1/4 cup)
- 240 g all-purpose flour (2 cups)
- 1 tsp cornstarch
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- Pink gel food colouring, to taste
- Granulated sugar for rolling
- 55 g powdered sugar (1/2 cup) for glaze
- 1 tbsp strawberry purée (from 2–3 strawberries)
- 1/2 tsp melted unsalted butter
Method
- Make strawberry cheesecake filling by mixing cream cheese, strawberry jam, and granulated sugar.
- Scoop filling and freeze.
- Prepare cookie dough by creaming butter and powdered sugar, then add egg, vanilla, oil.
- Mix in flour, cornstarch, baking powder, baking soda, salt, and pink gel food colouring.
- Portion dough and fill with frozen cheesecake filling.
- Chill filled cookies.
- Shape cookies and roll in granulated sugar.
- Bake cookies until just set.
- Prepare strawberry glaze by mixing powdered sugar, strawberry purée, and melted butter.
- Glaze cookies right before serving.
