- 20g honey
- 3 egg whites (105g)
- 50g sugar
- 45g pastry flour
- 18g canola oil
- 220g strawberry
- 40g sugar
- 20g honey
- 5g lemon juice
- 20g raspberry puree (optional)
- 2 gelatin sheets (4g)
- 95g milk
- 1 vanilla bean
- 2 gelatin sheets (4g)
- 125g white chocolate
- 130g heavy cream
- 55g water
- 105g sugar
- 105g glucose or clear corn syrup
- 70g condensed milk
- 105g white chocolate
- 3 gelatin sheets (6g)
- 50g white chocolate
- 20g corn syrup
- green food coloring
Method
- Preheat oven to 375F.
- Make vanilla sponge: whisk egg yolks and honey.
- Whip egg whites and sugar until stiff peaks form.
- Fold egg whites into yolk mixture.
- Sift pastry flour and fold into batter.
- Add canola oil and mix gently.
- Bake for 8 to 10 minutes.
- Prepare strawberry honey jelly: cook strawberry, sugar, honey, lemon juice, and raspberry puree.
- Soften gelatin sheets and add to hot mixture.
- Cool jelly and pour into molds; yield 16 half spheres.
- Make vanilla white chocolate mousse: heat milk with vanilla bean.
- Soften gelatin sheets and dissolve in milk mixture.
- Melt white chocolate and combine with milk mixture.
- Whip heavy cream and fold into chocolate mixture.
- Pour mousse into heart molds; yield 7 hearts.
- Prepare glaze: heat water, sugar, glucose, and condensed milk.
- Add white chocolate and gelatin sheets; mix until smooth.
- Make modeling chocolate: melt white chocolate and corn syrup, add green food coloring.
- Assemble cake layers with sponge, jelly, and mousse.
- Glaze cakes and decorate with modeling chocolate.
