Ingredients
- 15 guajillo chiles
- 3 ancho chiles
- 1/2 onion
- 6 garlic cloves
- 1 cinnamon stick
- 1 bay leaf
- 1/2 teaspoon oregano
- 1 tablespoon salt
- 1 tablespoon pepper
- 1 tablespoon garlic
- 2 tablespoons apple cider vinegar
- 6 oz pineapple juice
- oil for cooking
Method
- Drop the guajillo and ancho chiles in water and simmer until tender, then let cool for 5-6 minutes.
- Remove the bay leaf from the chiles and blend the chiles, onion, garlic, cinnamon stick, bay leaf, oregano, salt, pepper, apple cider vinegar, and pineapple juice until smooth.
- Simmer the blended sauce for about 5 minutes.
- Taste the sauce and adjust salt, pepper, and garlic as needed.
- Cook ground pork in a skillet over high heat until browned.
- Add the adobo sauce to the cooked ground pork and stir to combine.
- Warm tortillas in a skillet with a little oil.
Additional tips
- Use a digital thermometer to ensure pork reaches 175°F for safety.
