- 800 g potatoes
- 2 tbsp neutral oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 3/4 tsp salt
- 1/4 tsp ground black pepper
Method
- Scrub the potatoes thoroughly or peel them if preferred, then cut them into evenly sized 2 cm pieces.
- Place the potatoes in a saucepan, cover with cold water and bring to a boil.
- Cook for 5 minutes, then drain thoroughly. Allow the potatoes to steam-dry for 2 minutes.
- Combine the paprika, garlic powder, salt and black pepper in a small bowl.
- Heat the oil in a large skillet over medium-high heat.
- Add the potatoes in a single layer and cook without moving them for 4 to 5 minutes, until the undersides are golden.
- Turn the potatoes and continue cooking for 15 to 18 minutes, turning occasionally, until crisp on every side and tender in the centre.
- Sprinkle over the seasoning mixture during the final 2 minutes and toss until the potatoes are evenly coated.
- Taste, adjust the seasoning if necessary and serve immediately.
