Ingredients
- 1/2 medium onion, finely diced
- 3 garlic cloves, minced
- 200 g ground beef
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/2 tsp paprika
- 1 tbsp olive oil
- 10 g fresh parsley, chopped
- 2 large flour tortillas
- 100 g grated mozzarella
Method
- Heat the olive oil in a skillet over medium heat.
- Add the diced onion and cook for 3 to 4 minutes, until softened.
- Add the garlic and cook for 30 seconds, stirring continuously.
- Add the ground beef and break it into small pieces with a wooden spoon.
- Season with the salt, black pepper and paprika. Cook for 6 to 8 minutes, until the beef is browned and completely cooked.
- Remove the skillet from the heat and stir in the chopped parsley.
- Lay the tortillas flat and divide half of the mozzarella between their centres.
- Spoon the beef mixture over the cheese, then add the remaining mozzarella.
- Fold the sides of each tortilla over the filling and roll tightly to form a closed wrap.
- Return the skillet to medium-low heat and place the wraps seam-side down in the dry pan.
- Cook for 2 to 3 minutes on each side, until the tortillas are crisp and the mozzarella has melted.
- Rest for 1 minute, then cut and serve while hot.
