  • 1 whole turkey, 14–16 lb, fully thawed with giblets removed
  • 1 gallon vegetable broth, not low-sodium
  • 1 cup kosher salt
  • 1/2 cup light brown sugar
  • 1 tablespoon whole black peppercorns
  • 1½ teaspoons allspice berries
  • 1½ teaspoons chopped candied ginger
  • 1 gallon heavily iced water

Method

8 steps
  1. Combine the vegetable broth, kosher salt, brown sugar, peppercorns, allspice berries and candied ginger in a large stockpot.
  2. Bring the mixture to a boil, stirring occasionally until the salt and sugar have dissolved.
  3. Remove the brine from the heat and let it cool to room temperature.
  4. Refrigerate the brine until completely chilled. It can be prepared 2–3 days ahead.
  5. Combine the chilled brine with 1 gallon heavily iced water in a clean 5-gallon food-safe container.
  6. Place the thawed turkey breast-side down in the brine, ensuring it is fully submerged.
  7. Cover and refrigerate or keep below 40°F (4°C) for 8–16 hours, turning the turkey once halfway through.
  8. Remove the turkey from the brine, discard the brine and pat the turkey thoroughly dry before roasting.
