8 ingredients- 1 whole turkey, 14–16 lb, fully thawed with giblets removed
- 1 gallon vegetable broth, not low-sodium
- 1 cup kosher salt
- 1/2 cup light brown sugar
- 1 tablespoon whole black peppercorns
- 1½ teaspoons allspice berries
- 1½ teaspoons chopped candied ginger
- 1 gallon heavily iced water
Method
8 steps- Combine the vegetable broth, kosher salt, brown sugar, peppercorns, allspice berries and candied ginger in a large stockpot.
- Bring the mixture to a boil, stirring occasionally until the salt and sugar have dissolved.
- Remove the brine from the heat and let it cool to room temperature.
- Refrigerate the brine until completely chilled. It can be prepared 2–3 days ahead.
- Combine the chilled brine with 1 gallon heavily iced water in a clean 5-gallon food-safe container.
- Place the thawed turkey breast-side down in the brine, ensuring it is fully submerged.
- Cover and refrigerate or keep below 40°F (4°C) for 8–16 hours, turning the turkey once halfway through.
- Remove the turkey from the brine, discard the brine and pat the turkey thoroughly dry before roasting.
