Ingredients

  • oil
  • onion
  • peppers
  • spice mix (cumin, coriander, sumac, smoked paprika)
  • garlic cloves
  • chopped tomatoes (1 tin)
  • salt
  • black pepper
  • spinach

Method

    Get a large pan with some oil and fry the chopped onion and peppers until they have softened.

  2. 2

    Add the spice mix (cumin, coriander, sumac, smoked paprika) to the pan.

  3. 3

    Add garlic cloves and fry for a further 30 seconds to a minute.

  4. 4

    Add one tin of chopped tomatoes, a teaspoon of salt, and plenty of black pepper, then stir to combine.

    Cover the pan with a lid and simmer for about 20 to 25 minutes.

    Just before the end of cooking, add spinach and stir until it wilts.
