Ingredients
- oil
- onion
- peppers
- spice mix (cumin, coriander, sumac, smoked paprika)
- garlic cloves
- chopped tomatoes (1 tin)
- salt
- black pepper
- spinach
Equipment
- Large frying pan with lid
- Wooden spoon
- Sharp knife
Method
- Get a large pan with some oil and fry the chopped onion and peppers until they have softened.
- Add the spice mix (cumin, coriander, sumac, smoked paprika) to the pan.
- Add garlic cloves and fry for a further 30 seconds to a minute.
- Add one tin of chopped tomatoes, a teaspoon of salt, and plenty of black pepper, then stir to combine.
- Cover the pan with a lid and simmer for about 20 to 25 minutes.
- Just before the end of cooking, add spinach and stir until it wilts.
Helpful tips
- Soften the onion and peppers before adding the spices.
- Cook the garlic only briefly so it does not burn.
- Add the spinach near the end so it only just wilts.
Storage
Refrigerate leftovers promptly in a covered container and reheat until piping hot.
