Chicken and Cheese Rolls with Roasted Potatoes

  • 3 chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 tsp sweet paprika
  • 5 tbsp mayonnaise, divided
  • 1 tbsp olive oil
  • 3 mozzarella cheese sticks
  • 3 cheddar slices
  • 4 potatoes, peeled
  • 50 g grated cheese, such as mozzarella, Emmental or cheddar

Method

20 steps
  1. Preheat the oven to 200°C (390°F).
  2. Lay one chicken breast flat on a chopping board.
  3. Slice horizontally through the thickest part to create two thinner pieces.
  4. Repeat with the remaining chicken breasts to make six thin chicken pieces.
  5. Cover the chicken with cling film and pound it lightly with a meat tenderiser or rolling pin.
  6. Season the chicken with salt and black pepper.
  7. Spread 3 tablespoons mayonnaise over the chicken pieces.
  8. Cut each mozzarella stick and cheddar slice in half.
  9. Place one piece of mozzarella and one piece of cheddar onto each chicken piece.
  10. Fold or roll the chicken around the cheese.
  11. Cut the potatoes into thick chip-shaped sticks.
  12. Arrange the potatoes in a baking tray or ovenproof frying pan.
  13. Season the potatoes with salt and sweet paprika and drizzle with olive oil.
  14. Place the chicken rolls over the potatoes.
  15. Brush the remaining 2 tablespoons mayonnaise over the chicken.
  16. Cover with a lid or aluminium foil.
  17. Bake for 30 minutes.
  18. Remove the cover and sprinkle over the grated cheese.
  19. Bake or grill for another 5 minutes, until the cheese has melted and the chicken is completely cooked.
  20. Check that the centres of the chicken have reached at least 75°C before serving.
