Ingredients
- 2 lb zucchini
- 1 tsp salt
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup diced green onions or chives
- 3/4 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp ground black pepper
- Olive oil for sautéing
Method
- Wash and trim the ends of the zucchinis, then grate on the large holes of a box grater or food processor.
- Place grated zucchini into a large bowl or colander and stir in 1 teaspoon of salt.
- Set aside for 10 minutes to draw out excess water.
- Squeeze the zucchini dry with your hands or cheesecloth to remove as much water as possible.
- Add the grated zucchini to a bowl with two lightly beaten eggs and 1/2 cup chopped green onions.
- In a small bowl, stir together 3/4 cup flour, 1/2 teaspoon salt, 1/2 teaspoon black pepper, and 1 teaspoon baking powder.
- Add the dry mixture to the zucchini mixture and stir until well combined.
- Heat a large pan over medium-high heat and add two tablespoons of oil.
- Once hot, add heaping tablespoons of the zucchini mixture and flatten slightly.
- Saute for about four minutes per side until golden brown, adding more oil as needed.
