Ingredients

  • 2 lb zucchini
  • 1 tsp salt
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup diced green onions or chives
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground black pepper
  • Olive oil for sautéing

Method

  1. Wash and trim the ends of the zucchinis, then grate on the large holes of a box grater or food processor.
  2. Place grated zucchini into a large bowl or colander and stir in 1 teaspoon of salt.
  3. Set aside for 10 minutes to draw out excess water.
  4. Squeeze the zucchini dry with your hands or cheesecloth to remove as much water as possible.
  5. Add the grated zucchini to a bowl with two lightly beaten eggs and 1/2 cup chopped green onions.
  6. In a small bowl, stir together 3/4 cup flour, 1/2 teaspoon salt, 1/2 teaspoon black pepper, and 1 teaspoon baking powder.
  7. Add the dry mixture to the zucchini mixture and stir until well combined.
  8. Heat a large pan over medium-high heat and add two tablespoons of oil.
  9. Once hot, add heaping tablespoons of the zucchini mixture and flatten slightly.
  10. Saute for about four minutes per side until golden brown, adding more oil as needed.
