  • 1 cup (100g) gluten-free rolled oats
  • 1 cup (120g) raw almonds
  • 1/4 cup (30g) vegan vanilla protein powder
  • 1/4 cup (50g) coconut oil, melted
  • 2 tablespoons maple syrup
  • 1/4 teaspoon salt
  • 1 block (14 oz / 400g) firm tofu, drained and pressed
  • 1/2 cup (120ml) fresh lime juice (about 6-8 Key limes or 4-5 regular limes)
  • 2 tablespoons lime zest
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (30g) vegan vanilla protein powder
  • 1/4 cup (60ml) coconut cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon turmeric (for color, optional)
  • 1 tablespoon cornstarch

Method

8 steps
  1. Preheat oven to 350°F (175°C). Lightly grease a 9-inch pie dish.
  2. In a food processor, pulse oats and almonds until finely ground. Add protein powder and salt; pulse to combine.
  3. Add melted coconut oil and maple syrup; pulse until mixture holds together when pinched. If too dry, add 1 teaspoon water at a time.
  4. Press mixture firmly into the bottom and up the sides of the pie dish. Bake for 10-12 minutes, until lightly golden. Let cool completely.
  5. In a blender, combine tofu, lime juice, lime zest, sugar, protein powder, coconut cream, vanilla, turmeric, and cornstarch. Blend until completely smooth, scraping down sides as needed.
  6. Pour filling into cooled crust and smooth the top. Bake for 25-30 minutes, until edges are set but center still slightly jiggly.
  7. Remove from oven and cool to room temperature, then refrigerate for at least 4 hours or overnight to set fully.
  8. Serve chilled, optionally topped with vegan whipped cream and extra lime zest.

Recipe notes

Helpful tips

  • For a more intense lime flavor, add an extra tablespoon of zest.
